What Uncle G's is

I run a restaurant and two food trucks in Birmingham, Alabama. pan pizzas, real volume. It started during the pandemic, making pizza out of my house and running pop-ups. I put $20k into the first truck in 2021 and did $110k that year. Added a second truck in 2022: $550k. 2023: $1.1M. The restaurant opened in 2024, and between all three, we did $1.4M.

Along the way I've had four rigs built, trucks and trailers, and paid full price for every lesson in them: builders, specs, equipment, what the county lets on the road. Those lessons are most of what this practice sells.

The trap

"I built a business and gave myself the worst job in it."

First in, last out. Every station was mine the second someone called out. Books after close. 2am calls. Licensing surprises that ate a week each. An MCA hanging over all of it.

The turn

Then the operating order landed (systems, training, quality, service, in that order) and everything changed. Dough programs my team now runs better than I do. Training that sticks. Being the kind of employer people stay for. Numbers checked weekly instead of feared quarterly.

The obsession ran far enough that I taught myself the AI stack and built Uncle G's own POS from scratch. If I can put my own point-of-sale into production, I can set up Claude for your bookkeeping.

The payoff

The business runs without me standing in it. The hours came back, and became the pizza content (1M+ views), this consulting practice, and an actual life.

What the shops are for

I employ people in my community, and my job is protecting their jobs and serving their best interests. And when a school raffle, a team, or a church asks, the answer is yes: gift cards, every time. A business that's the glue of its community is the one the community holds up.

Why consulting

The escape turned out to be repeatable, and that's the product. I like the figuring-it-out part as much as the pizza, and now it's the job I gave myself: manager of the company, not employee of it.

These days that means mobile food operators, any cuisine: people about to sign with a builder, trucks getting square with their county and their health department, and operators adding a second rig and finding out every city taxes them differently. Pizza people still get dough opinions. Video call first. The systems travel better than I do, and I travel fine.
